As a single girl with lots of coupled friends it’s become my tradition to stay home on Valentine’s Day and make myself something uber delicious to eat and drink WAY to much wine. This year I’m sharing a couple of yummy treats I’m thinking of whipping up for myself!
First off is Figs with Rosemary Goat Cheese:
Ingredients needed are:
• 11 ounces soft mild goat cheese at room temperature (about 1 1/4 cups)
• 1/2 cup heavy cream
• 2 teaspoons finely chopped fresh rosemary leaves, or to taste
• 1 tablespoon honey
• 1 pound fresh figs
In a bowl whisk together all ingredients except figs until smooth and season with salt and pepper. Rosemary goat cheese may be made 1 day ahead and chilled, covered. Bring goat cheese to cool room temperature before serving.
Mound goat cheese in center of a platter. Halve figs and arrange around goat cheese for dipping. (If you can’t find fresh figs-which I haven’t seen in Richmond in a while- you can use fig or peach preserves and water crackers.)
Second is a simple “fondue style” desert to enjoy-and requires NO pots or pans!
Go to the local super market and get Marzetti’s Chocolate Dip. While you’re there pick up your favorite fruits (strawberries, bananas, etc.) and some graham crackers and marshmallows if you like. Once home pop the dip in the microwave for a few second, then simply dip and enjoy…
By this time, between all the sugar and wine, you should be well on your way to an Anti-Valentine’s day food coma.
But remember to hide your phone from yourself, heaven forbid you make the late night drunken ex-booty text!
