On a past trip to Orlando, we found a gem of a restaurant in Christo’s Cafe. My only disappointment was that we found it on our last day. Christo’s is not a huge place but the welcoming nature of our waitress told me we were in for a pleasant breakfast. I think my eyes might have bulged out of my head once I saw what I would be having on the menu: Christo’s French Toast (deep fried).
I do not know why it took me so long to attempt this but here it is. My ode to Christo’s…
Whisk together flour, salt, and sugar in large bowl. Beat the eggs, milk, orange zest, and vanilla extract together in medium bowl. Pour the egg mixture on flour and whisk until smooth. Alternatively, ingredients can be mixed in a blender.
Heat oil in a deep-fryer or large saucepan to 375 °F (190 °C).
Soak the bread slices in the egg mixture until the egg has penetrated through to the center of the bread. Wipe off the excess egg. Cook in the deep-fryer a few pieces at a time to avoid overcrowding. Cook until golden brown on both sides and no longer soggy in the center, about 4 minutes. Drain the French toast on a paper towel-lined plate before serving.
If desired, sprinkle cinnamon and sugar on toast as they come out of the fryer.
